Lavender honey is produced by bees from the nectar of the Lavender flowers. These flowers are very aromatic and of them bees produced an excellent and delicious honey.
These plants grows in sunny places, in the summer months between July and August, the colors of lavender flowers are blue and violets, therefore we can find them of these two colors.
The lavender flower is very aromatic hence this honey peels off a subtle scent to Lavender.
The color of honey is usually clear, we can find them in amber light or white color, sweet taste, and its texture is medium crystallization and fluid consistency.
In the ancient time the origin of lavender can be traced to Persia and the Spanish Canary islands. But these days, lavender is grown in many countries, such as: Tasmania, Spain, Italy, Bulgaria, North America, Australia and, southern France, in last 5, 6 years Bulgaria became the biggest producer of lavender in the world with 40% of the world production outrunning France, which most people associate with lavender production. Lavender honey contains the highest level of TYROSINE from all studied honeys. Numbers of studies have found tyrosine to be useful during conditions of stress, prolonged work and sleep deprivation with reductions in stress hormone levels.
